Yum!



Since I posted the mini movie about spring, we have had rain, sleet and more rain...and when it wasn't raining, it looked like it should. Yesterday I was hungry for something different, so I made a soup that I found on Ree's site. Called Sherried Tomato Soup......and for the first time in my cooking career, I actually used heavy cream...I always substitute half and half, whole milk or evaporated milk, but this time I threw caution to the wind and followed the recipe. The only thing I did differently, is that I added the sherry after I sautéed the onions, because I wanted the alcohol to evaporate out and just leave the flavor. It was really good, different than I had anticipated.....and maybe not quite as wonderful as I had hoped...but still really good. On a cold, nasty winter evening it did hit the spot! (The Chicken Base she calls for in the recipe can be found at Sam's Club). Oh by the way, since I was using real cream and real butter I made sure to have multigrain bakery bread....3 grams of fiber to the slice....that was to offset some of the high cholesterol agents of the soup! There were also lots of tomatoes, onions and parsley...surely they added fiber too......all I know is that it was delicious and I would make it again.

Okay - Seriously??! FIRST time using heavy cream?! Is that why you were disappointed? -Because you thought it should be THAT much creamier?
