It has been busy...

March is now half way gone.....and I feel like I just barely turned around and it was March 1st.
Relief Society at church has been busy...we have had a Women's Conference, R.S. Birthday...which was a busy time cooking and serving, both Katie and Jess had birthdays, then spring break company and whish...here we are it is the 18th of March.
This is the cake that I baked for the R.S. Birthday Party. It is 12 inches across and it is the recipe made 3 times.....it served about 48 people and we only had crumbs left. After I baked it and frosted it...I went to lift it up and was shocked at how heavy it was......then I weighed it on the bathroom scale and it weighed 18 lbs!!!! I shouldn't have been surprised, because it had 60 oz. of pineapple in it.....that's almost 4 lbs. of crushed pineapple! It was good! It is called Swedish Nut Cake and is a recipe I brought home from Ohio...it is a keeper! The recipe for this cake is on the sidebar of my blog....enjoy!

Hi Aunt Marilyn, I have deceided I am just moving in with you. Every thing that you make looks so good. Although it did make me think of carrot cake but pinnapples will definitely do!!! If only I had the energy to cook like you! I have my second doctors visit on Friday wish us luck I am very nervous. Love you and take care Carey

That is a pretty cake-perfect shape. I'm just trying to figure out how to bake and frost a cake that looks decent, not that my boys made.So far the cake decorating class my mom made me take when I was 12 has not paid off. My friend gave me some tips. I'll have to try it out. Although I will start small and it won't weigh 18 lbs.
