Pumpkin Bread
preheat oven to 350 degrees- makes 3 loaves
Pam and flour pans
3 1/2 c. flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
1 1/2 tsp. cloves
1 tsp. nutmeg
3 c. sugar
1 c. oil
1 c. water
4 eggs
2 c. canned pumpkin
1 c. walnuts - option
Mix all wet ingredients into a large mixing bowl. Mix together well. In a separate bowl mix together all dry ingredients. Gradually add all dry to the wet and stir as you go...do not over beat, as this will cause your quick bread to be tough. You just want to moisten and mix all ingredients. Pam and flour your loaf pans. (regular sized bread pans, if you use the foil kind from the store, only fill the pans about two thirds full and you will probably get more than 3 loaves) Pour batter into the 3 loaf pans. Bake 1 hour and 15 min. You will have to insert a toothpick in and see if it comes out clean...it may take a little longer to bake, depending on the day.
